"Veggie Jim" (aka the Meatless Snack Stick)
Pull out your best blender and dehydrator for a snack recipe that will become routine. Use can use any food processor and/or your oven on it's lowest setting in place of a dehydrator.
Veggie Jims Recipe #1:
- 1 Package Cenalga Nori Sheets (cut into thirds)
- 1/2 cup pecans
- 1/2 cup walnuts
- ¼ cup sun-dried tomatoes, soaked in boiling water
- 2 TBS maple syrup
- 2 TBS apple cider vinegar
- 2 TBS soy sauce
- ½ tsp cumin
- ½ tsp paprika
- 1 tsp chili paste
- ½ tsp salt and pepper
Veggie Jims Recipe #2:
- 1 Package Cenalga Nori Sheets (cut into thirds)
- 12 ounces raw SUNFLOWER SEEDS
- 8 ounces raw PUMPKIN SEEDS
- 1 cup WATER or Veggie Stock(more as needed)
- 2 red BELL PEPPERS
Next, you take either type or variation of the above pastes. Then make yourself some seaweed "stoggies" by rolling some of the paste into the sheets. Use some water to lightly wet edge of the seaweed before rolling. This is done similar to how one might roll a cigar. Please see the example here:
After you've rolled them up, add them to your oven or dehydrator as pictured below:
Dehydrate 24 hours at the lowest setting, or 4-8 hours in your oven on the lowest setting.
Depending on the initial ingredients these can keep for a few days to a week in a cool dry storage. You'll likely be making another batch before then. :)
